SUMMARY:Scone Making Class\, Sebastopol
DESCRIPTION:Celebrate the New Year by learning to make scones! Join us in a fun\, educational\, and interactive class at Patisserie Angelica. \nPatisserie Angelica\, 6821 Laguna Park Way\, Sebastopol\nTickets \nPatisserie Angelica is a locally-owned\, award-winning French-style artisanal bakery. It has a Slow Food Snail of Approval. Our class will be taught by Maggie\, one of the famous bakers at the patisserie. We will gather in the kitchen to learn the process and mix the dough\, and then sit down in the cosy dining area to enjoy scones with a pot of hot tea. \nPatisserie Angelica’s scones are unique in that they’re made only with cream. There’s no butter\, unlike in many scone recipes. In a Press Democrat interview\, owner Gargana Karabelov explains that “The cream makes them crackly on the outside and softer on the inside\, and they don’t get dry. I like them better than scones made with butter.”Pa \nTickets for this special event are $40 for Slow Food members and $50 for non-members. The class is limited to 10 participants.

FEEDING TOMORROW tells an interconnected story of how food interacts with and transforms every part of our lives. By threading together the stories of a dynamic group of innovators\, we cast a new vision for a more regenerative world. \n  \nOur lens focuses on innovators across agriculture\, healthcare\, and education as they work to transform our broken food system. We follow Thabiti Brown\, Head of School at Codman Academy; Lisa Mcdowell\, Director of Nutrition at St. Joseph Mercy Hospitals; and Mark Shepard\, Founder & Farmer of New Forest Farm to discover the biggest challenges and the real solutions we face in agriculture\, healthcare\, and education. \n  \nOur film documents the hard truth about where we are today and provides tangible\, working examples: farming that will feed our future\, healthy food that will heal us\, a new model for holistic education. Each of our experts provide tangible actions that each one of us can make in our daily lives to be a part of change.\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n  \n\n\n\n\n\n\nSlow Food Sonoma County North | Contact Us \na 501(c)3 non-profit organization

Join us for a tour of Knights Valley Wagyu\, a 227-acre working cattle ranch that’s earned our Snail of Approval! \nEver wonder what makes Wagyu so special? The ranch is home to cattle with 100% Japanese genetics – that’s like royalty in the beef world! These happy cows spend their days foraging on lush native grasses\, soaking up the California sunshine. They also get a special\, hand-fed nutritional mixture twice daily\, tailored just for them. \nKnights Valley Wagyu is all about being kind to the planet and the animals. The land is devoted to wildlife\, native plants\, and cattle. No pesticides\, fertilizers\, or chemical agents are allowed and water usage is minimal. We believe that enjoying small amounts of thoughtfully and sustainably raised beef offers a delicious and ethical alternative to the typical factory farming of large animals. \nCome soak in the stunning beauty of the ranch and get the inside scoop on what makes Knights Valley Wagyu truly special. SUMMARY:Slow Books: Love\, Loss\, and What We Ate: A Memoir\, by Padma Lakshmi
DESCRIPTION:Slow Books is an ongoing activity of our chapter. The group meets every 6 weeks to discuss a food-related book and enjoy a potluck dinner based on the book. We meet in people’s homes which can usually only accommodate up to 8 people. For this reason\, we are usually unable to invite others than our core group of participants. \n\nBut we’re learning a lot from the books we’ve read\, and thought you might want to enjoy the books as well.  \n\n\nJUNE SELECTION: Slow Books: Love\, Loss\, and What We Ate: A Memoir\, by Padma Lakshmi \n\nA vivid memoir of food and family\, survival and triumph\, Love\, Loss\, and What We Ate traces the arc of Padma Lakshmi’s unlikely path from an immigrant childhood to a complicated life in front of the camera—a tantalizing blend of Ruth Reichl’s Tender at the Bone and Nora Ephron’s Heartburn \nLong before Padma Lakshmi ever stepped onto a television set\, she learned that how we eat is an extension of how we love\, how we comfort\, how we forge a sense of home—and how we taste the world as we navigate our way through it. Shuttling between continents as a child\, she lived a life of dislocation that would become habit as an adult\, never quite at home in the world. And yet\, through all her travels\, her favorite food remained the simple rice she first ate sitting on the cool floor of her grandmother’s kitchen in South India. \nPoignant and surprising\, Love\, Loss\, and What We Ate is Lakshmi’s extraordinary account of her journey from that humble kitchen\, ruled by ferocious and unforgettable women\, to the judges’ table of Top Chef and beyond. It chronicles the fierce devotion of the remarkable people who shaped her along the way\, from her headstrong mother who flouted conservative Indian convention to make a life in New York\, to her Brahmin grandfather—a brilliant engineer with an irrepressible sweet tooth—to the man seemingly wrong for her in every way who proved to be her truest ally. A memoir rich with sensual prose and punctuated with evocative recipes\, it is alive with the scents\, tastes\, and textures of a life that spans complex geographies both internal and external. \nLove\, Loss\, and What We Ate is an intimate and unexpected story of food and family—both the ones we are born to and the ones we create—and their enduring legacies. SUMMARY:Slow Books: Dirt: Adventures in Lyon as a Chef in Training\, Father\, and Sleuth Looking for the Secret of French Cooking\, by Bill Buford
\n\n\nBut we’re learning a lot from the books we’ve read\, and thought you might want to enjoy the books as well.  \n\n\nMAY SELECTION: Dirt: Adventures in Lyon as a Chef in Training\, Father\, and Sleuth Looking for the Secret of French Cooking\, by Bill Buford \n\n\nWhat does it take to master French cooking? This is the question that drives Bill Buford to abandon his perfectly happy life in New York City and pack up and (with a wife and three-year-old twin sons in tow) move to Lyon\, the so-called gastronomic capital of France. But what was meant to be six months in a new and very foreign city turns into a wild five-year digression from normal life\, as Buford apprentices at Lyon’s best boulangerie\, studies at a legendary culinary school\, and cooks at a storied Michelin-starred restaurant\, where he discovers the exacting (and incomprehensibly punishing) rigueur of the professional kitchen. With his signature humor\, sense of adventure\, and masterful ability to bring an exotic and unknown world to life\, Buford has written the definitive insider story of a city and its great culinary culture. The first step is roasting\, which is much like roasting coffee. Time and temperature are closely monitored and adjusted during the roasting process. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nOnce the beans have been roasted\, there are several more processes before the chocolate bars are molded and packaged. The artwork on the labels are photographs of quilts made by Cathy Shanahan\, a renowned textile artist\, and Jeff’s aunt!

SUMMARY:Slow Books: Invitation to A Banquet\, by Fuchsia Dunlop
DESCRIPTION:Our Slow Boods group is currently full\, but please enjoy reading along with us. \nDECEMBER SELECTION: Invitation to A Banquet: The Story of Chinese Food\, by Fuchsia Dunlop \n\nChinese was the earliest truly global cuisine. When the first Chinese laborers began to settle abroad\, restaurants appeared in their wake. Yet Chinese has the curious distinction of being both one of the world’s best-loved culinary traditions and one of the least understood. For more than a century\, the overwhelming dominance of a simplified form of Cantonese cooking ensured that few foreigners experienced anything of its richness and sophistication—but today that is beginning to change. \n\n\nIn Invitation to a Banquet\, award-winning cook and writer Fuchsia Dunlop explores the history\, philosophy\, and techniques of Chinese culinary culture. In each chapter\, she examines a classic dish\, from mapo tofu to Dongpo pork\, knife-scraped noodles to braised pomelo pith\, to reveal a distinctive aspect of Chinese gastronomy\, whether it’s the importance of the soybean\, the lure of exotic ingredients\, or the history of Buddhist vegetarian cuisine. \n\n\nMeeting food producers\, chefs\, gourmets\, and home cooks as she tastes her way across the country\, Fuchsia invites readers to join her on an unforgettable journey into Chinese food as it is cooked\, eaten\, and considered in its homeland. SUMMARY:Slow Books: The Upstairs Delicatessen: On Eating\, Reading\, Reading About Eating\, and Eating While Reading
\nBut we’re learning a lot from the books we’ve read\, and thought you might want to enjoy the books as well. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nOCTOBER SELECTION: The Upstairs Delicatessen: On Eating\, Reading\, Reading About Eating\, and Eating While Reading\, by Dwight Garner \n\n\nDwight Garner\, the beloved New York Times critic and the author of Garner’s Quotations\, serves up the intertwined pleasures of books and food. The product of a lifetime of obsessively reading\, eating\, and every combination therein\, The Upstairs Delicatessen: On Eating\, Reading\, Reading About Eating\, and Eating While Reading is a charming\, emotional memoir\, one that only Garner could write. In it\, he records the voices of great writers and the stories from his life that fill his mind as he moves through the sections of the day and of this book: breakfast\, lunch\, shopping\, the occasional nap\, drinking\, and dinner. \n\n\nThrough his lifelong infatuation with these twin joys\, we meet the man behind the pages and the plates\, and a portrait of Garner\, eager and insatiable\, emerges. He writes with tenderness and humor about his mayonnaise-laden childhood in West Virginia and Naples\, Florida (and about his father’s famous peanut butter and pickle sandwich)\, his mind-opening marriage to a chef from a foodie family (“Cree grew up taking leftover frog legs to school in her lunch box”)\, and the words and dishes closest to his heart. This is a book to be savored\, though it may just whet your appetite for more. (Amazon)

Growing heirloom seeds saved from the same soil and climate\, even as we face climate change’s extreme droughts and floods\, means that the seeds remember how to adapt. Seeds also carry our stories–where we came from and what nourished our ancestors. The heirloom grains I grow come from many parts of the world by the hands of people immigrating or escaping. The mission then and now is to bring together communities to end food injustice and reverse global warming by rescuing and sharing locally-grown food with those who have been systematically marginalized. We envision a just food system in which everyone has access to healthy food that honors and nourishes our community and heals the planet through eliminating food waste. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nFarm to Fight Hunger is a non-profit organization that grows\, harvests and delivers fresh nutritious produce\, free of charge\, to those in Sonoma County in need of healthy food. Eggs laid by happy pastured hens are also donated to local food banks. We farm in an earth-friendly sustainable manner and work to improve the soil health\, therefore improving the nutritional content of the food we grow\, increasing the amount of carbon the soil can hold and reducing greenhouse gases. We will work to make the farm its own healthy balanced ecosystem\, with habitat for both native plants and beneficial insects. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nFarm to Fight Hunger is a Slow Food in Sonoma County Snail of Approval farm. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n \n\n\n\nFarm to Fight Hunger owners Bruce Mentzer and Anthony Solar\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nP.O. Born in rural Mexico\, Eduardo “Lalo” García Guzmán and his family left for the United States when he was a child\, picking fruits and vegetables on the migrant route from Florida to Michigan. He worked in Atlanta restaurants as a teenager before being convicted of a robbery\, incarcerated\, and eventually deported. Lalo landed in Mexico City as a new generation of chefs was questioning the hierarchies that had historically privileged European cuisine in elite spaces. At his acclaimed restaurant\, Máximo Bistrot\, he began to craft food that narrated his memories and hopes. Mexico City–based journalist Laura Tillman spent five years immersively reporting on Lalo’s story: from Máximo’s kitchen to the onion fields of Vidalia\, Georgia\, to Dubai’s first high-end Mexican restaurant\, to Lalo’s hometown of San José de las Pilas. What emerges is a moving portrait of Lalo’s struggle to find authenticity in an industry built on the very inequalities that drove his family to leave their home\, and of the artistic process as Lalo calls on the experiences of his life to create transcendent cuisine. The Migrant Chef offers an unforgettable window into a family’s border-eclipsing dreams\, Mexico’s culinary heritage\, and the making of a chef. (Amazon)

Tomales Bay has the cool\, clean water rich in plankton that oysters feed on to grow plump and sweet\, and the flavor of the bay is evident in every delicious mouthful. \nWe started out with the aim of cultivating the highest quality oysters possible\, and that is still the driving principle behind Hog Island. Good things grow slowly and that is what we have tried to do\, developing sustainable aquaculture techniques to produce superior shellfish that taste wonderful while building a community of like-minded people. We take great care in everything that we do\, from cultivating oysters through to the ways in which we work with our environment and finally how we present our product to you. \nVisit our farm in Marshall and learn all about oysters\, how we farm them\, the marine environment in which they grow\, and how to shuck an oyster. \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\nSalt Is Another Product\nHarvesting salt the Hog Island way is hands-on from start to finish. We begin by feeding the mineral-rich water of Tomales Bay into a large evaporation tower lined with “salt sails\,” made from the same material we use to grow our oysters. Water drips down the sails and recirculates back to the top with the help of solar-powered pumps. Then\, we let the wind and sun work their magic to evaporate the sea water into a high salinity brine. \nNext\, the saturated brine gets brought into the salt house\, where Jeff gently heats it over a wood-fired brick oven. As the salt emerges from the brine\, Jeff carefully extracts the harvest to give it a unique\, fluffy texture and rich mineral content. \nThe distinct mineral makeup of Tomales Bay’s water gives our salt a high concentration of essential minerals\, like magnesium\, potassium\, iodine and more. With a deep umami flavor profile that’s uniquely West Marin\, Hog Island Saltworks adds the perfect finishing touch to any dish. \n\n\n\n\n\n\n\n\n\n \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\ninformation coming soon!
